I found this great Red Velvet Cupcake recipe on Amanda’s Blog, and thought it would be a great base for my husbands birthday cupcakes, I just gave Amanda’s recipe a little twist and substituted the unsweetened cocoa powder with a German nesquik cocoa powder (link is provided below). Also since I don’t like the Red food color (CSPI Says Food Dyes Pose Rainbow of Risks), I just used almond extract instead.
