Recipe // Easy made Bauernbrot


I love to bake, but baking bread is one of my favorite things to do, especially when it’s a rainy day outside and you don’t really want to leave the house.

I found this recipe in one of my mom’s old German cook books and converted it into English. Last night I combined everything and this morning… tadaaaa, we had some yummy bread for breakfast.



What you’ll need:

  • 3 cups King Arthur Bread Flour
  • ¼ tsp dry active yeast
  • 1 ¼ tsp salt
  • 1 ½ cups warm water (105-110°F)
  • 1 tbsp olive oil

  1. Combine the flour, yeast and salt in a big plastic container. Mix well with your hands. Now add the warm water, I also added 1 tbsp honey to give the bread a little bit of sweetness, but you can leave it out!Mix everything together with your hands, (mix in a circular motion until dough is very sticky, that’s it) DO NOT KNEAD the dough, add the olive oil onto your hands and spread it on the bottom and the sides of the plastic container (this will help you get the dough out easier after the raising time).
  2. Now cover the container with plastic wrap and place it into your oven (DO NOT TURN THE OVEN ON) or counter for 12-20 hours – your bread will be more intense with the longer rising time.
  3. The next day, preheat your oven to 500°F and place your empty Dutch Oven in so it can get really hot. Flour your surface with flour and dump the risen dough onto it. Tap the dough flat with your hands, and fold each side toward the middle (see image).
  4. Flour each side of your dough, and place into the VERY HOT dutch oven. Cover and bake for 30 minutes at 500°F, after 30 min. uncover and bake 15 more minutes – this will give your bread the beautiful brown crust.
