Recipe // Apple pancake
With my German roots, I’m obligated to cook and bake German from time to time! Although my husband is a big meat-eater and loves the Schnitzel– he would probably eat it every day if I’d make it that often. He isn’t complaining about the German breakfasts that we had so far, which are all meat FREE!
However, my favorite breakfast is the Germany Apfelpfannkuchen – translated to English = Apple pancake
This is a super simple recipe, and I can’t wait to share it with you.
Ingredients:
- 50 g unbleached flour
- 50 g wheat flour
- 3 eggs
- 125 ml milk
- 125 ml half & half
- 125 ml sparkling water
- 100 g butter
- 450 g apples
- 5 tbsp powder-sugar
Note: If you don’t want to use the special flour for this recipe, you can substitute the flour with regular all-purpose flour.
Directions:
- In a large bowl, blend flour, milk, eggs, creme. Gradually mix in sparkle water, stirring constantly.
- Add 20g melted butter, let batter stand for 1 hour.
- Prepare your apples by washing, peeling and cutting them into cubes.
- Melt a quarter of your butter (10g) in a nonstick pan, and add one serving spoon of batter. Let the batter bake for 1 minute before you add a few of your apple cubes.
- Repeat step number 4 until you have used up all your batter and apples.
Suggestion:
You can substitute with pears or rum soaked raisins.
