Sweet Potato Donut – [GF, Vegan]

Who doesn’t love donuts or sweet potatoes? Not necessarily together at the same time but at least you like one or the other, am I right? Well, since you stumbled across this fabulous Sweet Potato Donut – [GF, Vegan] recipe, I am guessing you already implemented some sort of health-conscious decisions into your lifestyle.

But, if not that’s fine too because I am about to sweeten the deal for you, so let’s say bye-bye to those Gluten-free contradictions, shall we?

You may have heard people say that gluten-free baked goods are stale, grainy, or maybe even dense due to the lack of gluten protein (the glue that holds everything together). Most of the time, they probably were but, not this time! In fact, this GF | Vegan Donut Recipe is a game-changer.

I have to admit, I can’t believe I have not had sweet potatoes until I was 25, or was it 27? That just made me giggle because it’s so random. Well, growing up in Europe this isn’t really a vegetable we eat, at least in my mom’s house it wasn’t.

But, you know since we can only learn from our mistakes, I sure sent my mom this recipe. You are welcome! Jokes aside, being GF and Vegan is not always simple, especially when my kid’s & husband’s tastebuds are judging. 

In fact, my first recipe run was really good, so I thought. But my husband & daughter took one bite, then looked at me as if I’d given them raw sardines with mustard (I really hope that’s not a thing!) – oh gosh it is, I just googled it. 

Ok, let’s not get sidetracked I know you want to make this recipe. So, get your donut pan or donut maker out, and let’s get baking.

I highly recommend investing in a donut pan, because once you’ve made this donut you’ll be making it on repeat.

Here is a list of things that I use in my recipe, so it’s easier for you to get started.

Sweet Potato Donut - GF & VEGAN

Ingredients

Wet Ingredients:

  • 1 cup plant-based milk (almond, oat, and soy)
  • 2/3 cup sweet potato puree
  • 4 tbsp raw sugar
  • 2 tsp active dry yeast
  • 3 tbsp refined coconut oil
  • 1 tsp vanilla extract
  • a pinch of nutmeg
  • 1/2 tsp cinnamon

Dry Ingredients:

  • 1 1/2 cup gluten-free flour
  • 2 tbsp Almond flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt

Cinnamon Sugar:

  • 1 tsp cinnamon
  • 4 tbsp raw cane sugar

Instructions

  1. Preheat the oven to 350 F. Grease the donut pan, or pre-heat a donut maker if that's what you will be using.
  2. Heat up the non-dairy milk to about 100 F (1-2 min. in the microwave)
  3. Add in the rest of the wet ingredients except the yeast, and mix well until sugar is dissolved. Add the yeast last and mix until combined.
  4. In a bowl, mix gluten-free flour and the rest of the dry ingredients.
  5. Add the flour mix to the wet ingredients 1/2 cup at a time, and stir until you have no more clumps.
  6. If the mix is too runny add 1-2 tbsp of flour.
  7. Fill up a ziplock, cut one end and squeeze the batter into the pan.
  8. Drop the pan a few times onto the table so the batter can spread evenly into each form.
  9. Let the pan sit for 5 min., then bake at 350 F for 12-13 min.
  10. Cool for 5 min. then remove from pan and dip the donut into the cinnamon sugar.

Notes

Note: If you use a donut maker, just bake each donut according to the light indicator on your donut maker.
